E. Imagine that Simon is a friend of yours and has sent

Hey Mike, how have you been ?

It's been a long time since we haven't seen eachother. We should definetly catch up one of these days.  Unfortunately, I am not available this day as I am needed at work for a late shift. But, I will be sure to keep in touch to meet up another day for a coffee or lunch.
